Water Temperature
Play around with your water temperature. Green and white teas require cooler water between 160-185ºF; oolongs brew bet in higher temperatures, 185-205ºF; and black teas brew best in water 205º to boiling (212ºF).

Always Start with great water!No thermometer? A good way to guess the water temperature without one is to bring the water to a boil, and wait 30 seconds (for black and white tea) or 60 seconds (for green tea) before pouring over the the tea leaves.
